What is a food additive?
The definition of food additives in the GB 2760-2014 National Food Safety Standard for the Use of Food Additives is: "Artificial or natural substances added to food to improve food quality, color, aroma, and taste, as well as to meet the needs of preservation, preservation, and processing technology. Spices used in food, basic agent substances in gum based candies, and processing aids used in the food industry are also included
According to their functional categories, they can be divided into 22 categories, including acidity regulators, anti caking agents, defoamers, and antioxidants.

02 Food Additives Listed in the Hazardous Chemicals Catalogue (2015 Edition)
Sodium nitrite
Sodium nitrite can be used as a food additive, mainly as a color protectant and preservative, and is allowed to be used in cured meat products, pickled meat products, etc.
In the "Catalogue of Hazardous Chemicals (2015 Edition)", sodium nitrite is listed as item 2492 with CAS number 7632-00-0, and its hazard categories include oxidizing solids, acute toxicity, and harm to the aquatic environment.
In the United Nations' Model Regulations and Recommendations on the Transport of Dangerous Goods (TDG), sodium nitrite is classified as a Class 5.1 oxidizing substance and a Class 6.1 toxic substance, with a UN number of 1500 and a recommended packaging category of Class III. Potassium hydroxide
Food grade potassium hydroxide can be used as an acidity regulator to adjust the PH value in the production process. It is allowed to be used appropriately according to production needs in the processing of milk powder, cream powder, biscuits, infant formula, etc.
In the "Catalogue of Hazardous Chemicals (2015 Edition)", potassium hydroxide is listed as item 1667 with CAS number 1310-58-3, and its hazard categories include skin corrosion/irritation, severe eye injury/eye irritation.
In the United Nations' Model Regulations and Recommendations on the Transport of Dangerous Goods (TDG), sodium hydroxide is classified as a Class 8 corrosive substance with UN number 1813 and recommended packaging category II
